Mohegan Island Fish Chowder

what you need
- 3 large potatoes (3 cups)
- 1 cup chopped onion
- 1 Tbsp. olive oil
- 2 cups water
- 1 tsp. salt
- 1 tsp. basil
- 1/4 tsp. pepper
- 1 pound cod fillets
- 2 cups frozen corn
- 1 can (12 oz.) evaporated skim milk

Scrub potatoes well and cut into bite size pieces. Steam until tender, set aside.
In a large pot (Dutch oven) saute onion in olive oil until tender. Add potatoes, water, salt, basil, and pepper. Bring to boil, cover and simmer 15 minutes.
Place cod fillets on top of potatoes, cover pot and simmer until fish flakes easily (10 minutes). Carefully stir in corn and milk. Heat until corn and milk are hot, do not boil.
