Moist Banana Nut Bread

what you need
  • 3/4 cup margarine
  • 1 cup sugar
  • 1 1/2 cups mashed bananas
  • 2 eggs, beaten
  • 1 tsp. Vanilla
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 2 cups flour
  • 1/2 cup buttermilk or sour milk*
  • 1 cup chopped nuts
make it
Cream margarine and sugar, blend in bananas, eggs, vanilla. Add baking soda and salt to flour.

Add flour mixture to banana mixture while alternating the buttermilk or sour milk. Mix well after each addition. Add nuts; and mix.

Pour into 9x5x3 loaf pan. Bake 325' oven for about 1 hr and 15 minutes or until done in center.
Notes
* for 1/2 cup of sour milk = 1/2 cup milk, 1/2 tsp. vinegar, 1/4 tsp. baking soda = let stand a few minutes.
