Mom's Banana Nut Bread

what you need
  • 3/4 cup sugar
  • 1/2 cup shortening
  • 2 eggs, beaten
  • 2 cups sifted flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup mashed banana (2-3 bananas)
  • 1 Tbsp. lemon juice
  • 1 cup chopped walnuts
make it
Cream sugar, shortening, and beaten eggs together in large bowl. In a separate bowl, blend together the flour, baking soda, and salt. Add flour mixture to sugar mixture and blend together, then blend in mashed banana and lemon juice stirring until flour mixture becomes moistened. Add nuts last.

Spread in well greased and floured 9x5x3 inch loaf pan. Bake at 350 degrees for 55-60 minutes or until toothpick inserted in middle of loaf comes out clean.

Remove from pan and cool on rack until completely cool before wrapping.
Notes
May also bake 4 mini loaves from this recipe by reducing baking time to 45-50 minutes.

The small loaves make nice hostess gifts.
