Mom’s Chicken Broccoli Cheese Casserole

what you need
  • 3 lb. diced cooked chicken breast
  • 2 cans (10.5 oz. each) Campbell’s Cream of Chicken soup
  • 16 oz. Breakstone's or Knudsen Sour Cream
  • 1 cup Kraft Mayo
  • 2 oz. lemon juice
  • 1 cup diced onions
  • 2 lb. Kraft Shredded Mild Cheddar Cheese, divided
  • 4 cups cooked Minute Rice
  • 16 oz. frozen broccoli cuts
make it
Preheat oven to 350°F. In 1st bowl: mix chicken, soup, sour cream, mayo, lemon juice, onion, and 1 1/2 cups of cheese. In 2nd bowl: mix rice, frozen broccoli, and 1 cup of cheese.

In a large baking dish, press in rice mixture to cover bottom. Pour chicken mixture over and spread out to even thickness. Cover with remaining cheese. Cover baking dish with foil.

Bake 45 minutes, removing foil for last 10 minutes. Remove from oven and let stand 15 minutes to set up.
Notes
This was a family favorite that our mother made and my sisters and I all make from memory. We never knew the origin of this recipe, but that it always brings the family together. I hope another family gets the same enjoyment from it.
