Mom's Simple Potato Salad

what you need
  • 6-7 medium size baking potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1 can sliced black olives, drained
  • 3 hard boiled eggs
  • Salt and pepper to taste
  • 6 slices bacon, fried and crumbled

In a large saucepan, cover potatoes with salted (optional) water, heat to boiling, reduce heat and cover. Cook 15 minutes poking with a fork until done. Drain in colander.

In large bowl combine mayo, sliced olives, chopped eggs and salt and pepper. Toss with the potatoes, and sprinkle top with the bacon.

Chill in fridge for at least 3 hours.
