Monica's Stuffed Green Peppers

what you need
  • 6 green peppers
  • 1 1/2 pounds ground beef
  • 1 large onion, chopped
  • 1 cup rice
  • 2 cups water
  • 2 cans diced tomatoes
  • 2 cups shredded cheese
make it
Cut tops and seeds from peppers and par boil them for 7-10 minutes.

Brown ground beef and onion together. Add the rice, water, and tomatoes. Cook until rice is tender & mixture is slightly soupy. Remove from heat. Add cheese stir until melted.

When cheese is melted, spoon mixture into prepared green peppers. Bake at 450 degrees for 20 minutes.

Rated  by a cook on 11/19/2008 I substituted some tomato sauce for the tomatoes as some in my family do not like the whole tomatoes.
