Makes: 1 full crock-pot Total Time: 8 hr
Category: Dinner Entrees Sub Category: Beef Entrees

what you need
  • 3 lg. red potatoes
  • 1 lb. baby carrots
  • 1 lg. onion
  • About 1 lb. string beans, if you want
  • Green pepper, if you want
  • 3 lb. pot roast
  • Salt and pepper
  • 1 teaspoon minced garlic (flakes)
  • 2 Tbsp. parsley
  • 2 cans (15 ounce each) tomato sauce
  • 1 can (15 ounce) beef broth
make it
Peel potatoes, chop all veggies small enough to fit on a spoon. Cut meat in small pieces as the veggies. Add all to the crock-pot.

Add spices, tomato sauce and beef broth. Stir everything together.

Cook on low 8 hours.
I wash and cut up the veggies and meat the night before, and place the veggies in a Ziploc bag and do the same with the meat. That way all I have to do is put everything together in the morning before I go off to work.

My family loves this stew better than any other they've had. I think it's the tomato sauce.
