Nancy's Chocolate Eclair Cake

what you need
  • 1 box graham crackers
  • 2 boxes French vanilla instant pudding
  • 3 1/2 cups milk
  • 1 tub (8 oz.) Cool Whip
  • 1 can chocolate fudge frosting
make it
Line 9x13 pan with layer of graham cracker (may need to break some to make full coverage).

Mix pudding using the three and a half cups of milk. Fold in the Cool Whip. Pour half over the crackers, add another layer of graham crackers. Pour remaining mixture over crackers, add another layer of graham crackers.

Warm frosting in microwave for about 35 seconds (until pourable). Pour evenly over top of graham crackers (spread if needed).

Refrigerate for at least two hours.
May need to add more milk so that the crackers soften enough to be sliced. It depends on the humidity.

Rated  by JENN459 on 7/31/2004 i got this recipe from a client about 7 years ago. i make this at least twice a year. it always goes over big and people are very suprised when i tell them how easy it is to make. the best thing is that it does really taste like a good, rich eclair.
