Nayne's Yellow Squash Casserole

what you need
  • 1 stick butter
  • 2 boxes Stove Top Cornbread Stuffing Mix, divided
  • 2 lb. yellow squash (can use 2 16 oz. frozen)
  • 1 med chopped onion (or 1/2 cup frozen mirepoix mix)
  • 1 can cream of chicken soup
  • 1 pint sour cream
  • 2 cups grated cheddar cheese
make it
Melt butter add 1 box stuffing mix and press to line the bottom of a 9x13 pan.

Boil squash with onion. Drain. Mix squash with soup, sour cream, 1 box stuffing mix and cheese. Pour over crust.

Bake at 350°F for 30 min or until bubbly.
Notes
I made this for Christmas dinner and even the squash haters loved it.
