No-Bake Rhubarb Cheesecake Dessert

what you need
  • 1 pkg. Jell-O No Bake Cheesecake Mix
  • 1 cup sugar
  • 3 Tbsp. cornstarch
  • 4 cup fresh rhubarb, diced
  • 1/2 cup water
  • 2 cups Cool Whip Free
  • 1 1/2 cups Kraft Miniature Marshmallows

Prepare graham cracker crust from Jell-O cheesecake mix according to package directions and press into bottom of 7x11-inch pan.

Combine sugar and cornstarch in cooking pot. Stir in rhubarb and water. Cook and stir until thickened. Reduce heat, cooking and stirring for 2-3 minutes longer, or until rhubarb is soft (A few drops of red food coloring can be added if desired). Cool. Spread rhubarb mixture on crust.

Fold together Cool Whip and miniature marshmallows. Spoon over rhubarb mixture.

Prepare cheesecake filling from mix according to package directions. Spread on top of dessert.

Refrigerate for several hours.
A easy no bake dessert for spring.
