Nut Filled Chocolate Snowballs

what you need
  • 1 1/2 cups softened butter or margarine
  • 2/3 cup sugar
  • 1 tsp. vanilla
  • 2 cup flour
  • 1/8 tsp. salt
  • 1/2 cup cocoa
  • 2 cup chopped pecans (optional)
  • Powdered sugar (use when cookies are done)
make it
Cream together butter, sugar & vanilla til light & fluffy. Then add in the flour, salt and cocoa. Beat 2 minutes. Stir in pecans.

Roll into 1" balls. Put on an ungreased cookie sheet.

Bake for 20 minutes at 350 degrees F. When cookies are cooled, roll in powdered sugar.
Best idea is when the cookies are powder sugared, put them in the fridge if not eaten right away. The powdered sugar tends to get sticky if left out in room temp for a while. Then they become sticky nut filled choc. snowballs. If this does happen, just re-roll in powder sugar, but do it sparingly.

I timed this for 1 hour, give or take some minutes. I always make my dough ahead of time, freeze it in a bag with cookie type, degrees and how long so I can make them anytime later and I don't have to search for the recipe again. Makes it easier around Christmas time. So it's hard to say just how long.
