Nutritious and Delicious Vegetable Salad

what you need
  • 1 red potato
  • 1/2 cup zucchini and yellow squash
  • 1/2 cup canned artichoke hearts, rinsed, drained, & chopped
  • 1/2 cup roasted red pepper strips
  • 3 oz. tomato, slicing, cherry, or Roma varieties
  • 1/2 oz. green onion, chopped
  • 1/2 to 1 small garlic clove, minced
  • 1 Tbsp. light Italian dressing
  • Basil
  • Oregano
  • Parsley
  • Freshly ground black pepper

Boil the potato in lightly salted water.

Meanwhile, steam the zucchini and yellow squash. Once the potato and veggies are cooked, allow them to cool.

Put all the ingredients into a serving bowl, season with herbs, and toss with the dressing.
To jazz it up in flavor and nutrition, you can add freshly grated parmesan cheese or a shredded low fat Italian cheese mix. Just remember to keep your portions under control. 1.5 oz of cheese equals 1 serving of dairy.

Substitute another type of onion for the green onion if you desire.
