what you need
  • 11 medium - large potatoes
  • 9 eggs
  • 1 1/2 lb. bologna
  • 5-6 pickles
  • 2 medium onions
  • 1 can green peas
  • 2 Tbsp. sour cream
  • ~1 cup mayonnaise
  • Salt

Prepare LARGE bowl. Cook whole potatoes in salted water. Do not overcook. Cook eggs in salted water until fully cooked. Let potatoes and eggs cool before peeling.

Cube potatoes and bologna into 1/2" cubes. Cube eggs, pickles into 1/3" cubes. Chop onion, but not too small.

Combine all ingredients (except salt) and mix with mayonnaise. Add more mayonnaise as needed. Taste and add salt if necessary.
If needed, at the end, may add additional pickles to get that crunch and sour taste. Some add cooked cubed carrots for sweetness. Note, time is estimate, based on cooking time and cutting/cubing speed. This is a great holiday recipe for large family gatherings, plus leftovers for breakfast or lunch.
