One Pot Macaroni and Cheese

what you need
  • 4 tablespoons butter or margarine
  • 1 small onion, finely chopped
  • 1/4 cup flour
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 6 cups milk
  • 1 package (1 lb.) elbow pasta
  • 3 cups shredded cheddar
  • 1 cup veggies of your choice - optional (broccoli, red peppers, carrots zucchini and green peas all work well)
make it
Melt butter in a large saucepan over medium heat. Stir in onions and sweat them until they are transparent, but do not pick up any color. Stir in flour, salt and pepper. Cook a minute or two, stirring often.

Add milk and stir. Bring to a low simmer. Add elbow pasta and cover. Reduce heat and simmer for 8-10 more minutes.

Remove from heat and stir in the cheese. You can also add the fresh veggies now if you are using them.
Notes
I have used frozen veggies too, but put them in during the covered simmering stage.
