One Skillet Chicken

what you need
  • Olive oil
  • 3-4 sm-med red or white potatoes
  • 1 clove of fresh garlic, chopped
  • 1/4 med onion
  • 1 LG (1 lb.) boneless chicken breast or two 1/2 lb. boneless breasts (marinated in Italian dressing: optional)
  • Basil, chopped fine
  • 1 lb. asparagus or broccoli
  • Garlic salt
  • Garlic powder

While warming a thin layer of oil in a large deep skillet over medium heat, slice potatoes into thin circles and chop garlic and onion.

Once oil is warm, add chicken and lightly brown for 3 minutes each side, sprinkling with basil before turning. Turn heat down to low and layer the potatoes, onion and garlic around the chicken so they will brown. Over the potatoes layer the asparagus or broccoli. Season to taste with garlic salt and garlic powder. Additional olive oil can be added to help adhesion.

Cover and let steam for 20 minutes. Cut large chicken breast in two for serving.
We love this recipe because we have most of the seasonings on hand all the time, and it truly is a one skillet meal. We can do all the prep while the skillet heats and the chicken browns. I throw frozen chicken into a Ziploc bag with Italian dressing and put the fridge until I'm ready to make it. Can also be made with pork.
