Oven Baked Triscuit Chicken Nuggets

what you need
  • 1 1/2 to 2 lb. boneless skinless chicken breasts
  • 50 Triscuit Crackers (regular or reduced fat)
  • 1/3 cup Kraft Grated Parmesan Cheese
  • 3 tablespoons margarine or butter
  • 2 teaspoons Worcestershire sauce

Preheat oven to 450 degrees F. Cut up chicken breasts into small pieces. Place Triscuit crackers in a food processor and blend till they are finely crushed. Pour crushed crackers into a Ziploc bag. Mix in parmesan cheese. Melt margarine or butter in microwave. Mix in Worcestershire sauce.

Dip a few pieces of chicken into the margarine or butter and Worcestershire mixture allowing excess to drip off. Place the pieces in the crushed crackers. Shake to coat. Spray cookie sheet lightly with cooking spray. Place chicken nuggets in a single layer.

Bake for 7 to 9 minutes or until chicken is cooked through. Serve with your favorite dipping sauce.
This recipe is a family favorite that my mom gave me. I often double this recipe since they reheat well in the microwave. You can save time by preparing this recipe with boneless chicken tenders.
