Oven Tostadas

what you need
  • 6 corn tortillas
  • 1/2 cup Monterey Jack cheese grated
  • 1 tablespoon olive oil
  • 1 can black beans
  • 1 can cooked chicken breast
  • 1/4 cup chopped cilantro
  • 1 clove minced garlic
  • 1/2 small jalapeno, chopped
  • 1/2 cup chopped tomato
  • 1/4 cup chopped onion
  • Salt and pepper to taste
make it
Preheat oven to 350 degrees F. Put tortillas on a baking sheet and slide into oven.

Meanwhile, heat and mash beans in olive oil, heat canned chicken. Chop cilantro, garlic, jalapeno, tomatoes, and onion, add salt and pepper. Set aside.

When tortillas are crisp, smear on black beans, add chicken, top with grated cheese and slip back into the oven under the broiler until cheese is melted. Take out of the oven and cover with chopped mixture.
This is my tostada recipe. Very little fat because they aren't fried. If you want you can put a dollop of sour cream on top. Also try it with shrimp or shredded pork.
