Papa's Tortilla Casserole

what you need
  • 1 can (16 oz.) beans, any kind including liquid
  • 1 can (16 oz.) corn including liquid
  • 1 can (16 oz.) black olives, chopped including liquid
  • 1 packet taco seasoning mix
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 can (28 oz.) crushed tomatoes
  • 16 oz. Kraft Mild Cheddar Cheese, shredded
  • 10 corn tortillas
make it
Empty cans of ingredients into Dutch oven, add taco seasoning packet and stir over slightly simmering heat.

Cook up beef and add to Dutch oven. Cook up onion and add to Dutch oven. Stir occasionally and simmer for 30 minutes.

Layer mixture in large baking dish like this: mixture, cheese, tortillas until mixture runs out. Finish with a layer of cheese on top.

Bake in a 350 degrees F oven for 30 minutes to melt cheese.
Notes
If pan has been left too long or has been refrigerated, heat for an hour or until heated through.

This is my family's all time favorite casserole developed by my father who is affectionately known as PapaTaco. He is 82 and still going strong!
