Pasta Italian Style

what you need
  • 1/2 box spaghetti noodles or penne pasta (I prefer penne)
  • 1/2 cup extra virgin olive oil, divided
  • 3 cloves garlic, minced
  • 4 boneless skinless chicken breasts
  • 2 med. zucchini, small bite size pieces
  • 1-1/2 cups fresh mushrooms, sliced
  • 1 small red onion (optional)
  • 1/4 cup parmesan cheese
make it
Boil noodle according to box instructions.

Sautee garlic in 2 Tbsp. olive oil. Add chicken. Sautee chicken & garlic till semi done, then add veggies. Sautee till chicken is a nice golden brown and cooked through.

Drain noodles & add to chicken & veggie mixture. Add rest of olive oil to coat, and then add parmesan cheese.
Notes
Substitute for what ever kinds of veggies you like. Even substitute for steak of seafood. Or just go veggie on this one. Perfect as just a plain pasta also. Toss a nice green salad with Italian.
