Peggy's Summer Chicken Salad

what you need
- 1 can (10 oz.) white meat chicken
- 1 can (6-8 oz.) crushed pineapple, drained
- 1 gala apple cut into chunks (small bite size)
- 1/2 cup red seedless grapes
- 1 stalk celery, diced
- 2 Tbsp. lite or fat free salad dressing
- 2 Tbsp. sweet pickle relish
- Salt and pepper to taste
- 6 whole leaves iceberg or romaine lettuce (washed and dried)

Mix all ingredients, except lettuce in a bowl and chill for 20 minutes. Chill lettuce separately.
After 18 minutes, take lettuce out and place on salad plate which should also be chilled. Spoon salad into lettuce cups. Garnish with a sprig of grapes.
Notes
If using iceberg lettuce, the best leaves are a few layers down, with a nice curve for a natural edible bowl.
This is a great salad by the pool, on a picnic, or for baby and bridal showers.
