Penny's Easy Apple

what you need
  • 2 cans apple pie filling
  • 1 box spice cake mix minus 1/2 cup (save for future recipes)
  • 1/2 cup flaked coconut
  • 1 cup chopped pecans
  • 1/4 cup raisins (optional)
  • 1 stick + 2 tablespoons melted margarine
  • 1/2 tsp. cinnamon-sprinkled on top
  • 1/2 tsp. nutmeg-sprinkled on top
make it
Preheat oven to 350 degrees. Spray a 9" x 13" baking dish with non-stick spray.

Layer in order: the pie filling, cake mix, coconut, and pecans. Raisins, though optional, may be added after the pie filling.

Spooning slowly, or using a baster, drizzle melted margarine all over top of ingredients; try not to have "dry" spots. Sprinkle cinnamon & nutmeg before placing in oven.

Bake for 40-45 minutes or until nicely browned. Serve warm with vanilla ice cream for a real treat.
I have been making this quick and easy dessert for 28 years. It is great for potlucks and unexpected company. It can be in the oven in less than 10 minutes. Just keep the ingredients on hand. It has become a favorite of family and friends.
