Peppy Burger Soup

Makes: 6 servings, 1 1/2 cups each. Total Time: 1 hr 15 min

what you need
  • 1 lb. lean ground beef
  • 1/4 cup chopped/minced onion
  • 1/2 cup chopped celery (or tsp. celery salt)
  • 2-3 cups cubed potatoes, depending on how much broth you want the soup to have; we like more potatoes/less broth
  • 1/2 bag frozen mixed veggies (carrots, green beans, corn)
  • 1 can (14.5 oz.) diced tomatoes, undrained
  • 1 can (14 oz.) beef broth
  • 2 cups water
  • 1/2 tsp. Worcestershire sauce
  • 1 tsp. sugar
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • Dash of cayenne or red pepper
make it
Cook ground beef, onion and celery together in a medium/large sized Dutch oven/soup pot until meat is no longer pink.

Add all other items, and simmer over medium to medium-low heat for approx. 30 min. or until potatoes are cooked through.
Notes
This is a wonderful fall/winter soup or for anytime, really.

I've made this soup for various family & friends, and haven't found one person yet who doesn't love it - including children!

This is an easy recipe with ingredients you would normally have on hand. Enjoy!
