what you need
- 1 frozen package 8 filets fish: tilapia, cod, white fish
- 2 Tbsp. olive oil
- 1/2 cup pesto: homemade or store bought
make it
Thaw fish, pat dry. Heat pan with oil. Coat fish with layer of pesto on both sides.
Cook in oil 5 min on each side, until light and flakey.
Serve over a bed of long grain wild rice.
Notes
My dad makes his own pesto from basil in his own garden. He puts basil leaves, garlic, pine nuts and olive oil in a blender. He then puts the paste in zip bags and stores it in the freezer. We pull it out and break off a piece to cook with. Mmmmm.
