Pink Peppermint Pie

what you need
  • 2 pie crust (you can make your own or buy the pre-made ones)
  • 24 large marshmallows
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 6 drops peppermint extract
  • Red food coloring to desired color
  • 1 cup chilled whipping cream
  • 2 Tbsp. crushed peppermint candy (optional)
make it
Bake pie crusts. Heat marshmallows and milk in saucepan over low heat, stirring constantly, just until marshmallows are melted. Remove from heat; stir in vanilla, salt, peppermint extract, and food color.

Refrigerate, stirring occasionally, until mixture mounds slightly when dropped from a spoon. (Don't try and put this in the freezer to speed up the process like I did. You'll end up starting over, like I did.)

Beat whipping cream in chilled bowl until stiff. Stir marshmallow mixture until blended; fold into whipping cream. Pour into crusts. Refrigerate at least 12 hours. Just before serving, sprinkle with crushed candy.
When I made this recipe it took two pies to get rid of the filling. And it is great for Christmas parties. I just used red sugar crystals instead of the peppermint candy. To make this more festive you could do red and green sugar crystals. Or if desired you could add some green food coloring to some whipped cream and add a dollop of it on each slice before adding topping. Also, you could make this any color for any occasion.
