Pork Chop and Rice Casserole

what you need
  • 6 pork chops (boneless is really good)
  • 1 cup long grain rice (uncooked)
  • 2 cans Campbell's Beef Broth (or one can beef broth and one can French Onion)
  • Italian seasoning
  • Lemon pepper
make it
Lay pork chops in the bottom of a 9x13 casserole dish. Pour cup of rice over them. Pour broth over the rice and pork chops. Sprinkle Italian seasoning and lemon pepper to taste. Cover casserole tightly with foil.

Bake at 300 degrees F for 1 hour 45 minutes - 2 hours depending on the size of the pork chops. Best to check at 1 hour 45 minutes, so as not to dry it out. Remove from oven and serve.
Notes
I have used more pork chops at a time than listed above and it still baked fine with the same amount of liquid and rice.

This casserole comes out perfect every time and is great to take to pot lucks, friends who are ill, etc. The rice has a great flavor and the pork chops are fork tender. Be creative with seasonings.

My friend puts green peppers and onions instead of seasonings listed. You can modify this to your own tastes.
