what you need
  • 2 lb. pork shoulder, cut like stew meat
  • Salt, pepper, 1/8 tsp. sugar & onion powder
  • Bacon grease
  • 1 cup cooked rice
  • 1 can stewed tomatoes or Ro*Tel tomatoes
  • 1/2 cup jalapenos
  • 2 cans black eyed peas
make it
Season meat with salt, pepper, 1/8 tsp. sugar & onion powder. Fry meat in bacon grease. When golden brown add a cup of water & simmer (10 min).

Then add rice, tomatoes, jalapenos & black eyed peas. Stir well.

Then place in the oven at 350 degrees F. I always prepare this dish in a iron skillet. Cover the skillet with foil & bake for 45 minutes.
Notes
The meat should be tender and able to cut with a fork. This dish should have a rich flavorful taste. I serve this meal with steamed corn tortillas & butter. Great on cold winter days.
