Portabello Marinated Cheesy Chicken Breasts

what you need
  • 2-3 Tbsp. olive oil
  • Fresh or jarred grated or chopped garlic (to taste)
  • 5 boneless chicken breasts flattened and marinated in an herb/garlic marinade overnight (or buy already marinated breasts)
  • 1/4 cup white zinfandel wine
  • Jarred sliced marinated portabello mushrooms
  • Mozzarella cheese
  • Parmesan cheese
make it
Heat oil in skillet and add garlic. Brown both sides of breasts on med high heat.

Pour wine over breasts and cover breasts with marinated mushrooms. Cover pan and cook on med for approx. 10 minutes.

Pour mozzarella cheese to cover breasts and sprinkle with parmesan cheese, cover and cook until cheese is well melted.
Notes
I like to serve this over rice or orzo.
