what you need
  • 1 teaspoon extra virgin olive oil
  • 1 clove garlic, minced
  • 2 portobello mushroom caps (6 oz total)
  • Pinch of salt
  • Pinch of black pepper
  • 12 oz. mozzarella cheese, sliced or shredded
  • 10 fresh basil leaves
  • 2 small fresh tomatoes, sliced and roasted or grilled
  • Fresh oregano leaves for optional garnish
make it
Preheat oven to 425 degrees. Lightly spray baking sheet with nonstick cooking spray and set aside. Combine oil and garlic in a small bowl, and rub mushroom caps on all sides with mixture.

Place caps, top side down, on baking sheet. Season with salt and pepper. Arrange cheese, basil and tomato slices on top of mushrooms. Sprinkle with oregano if using.

Bake about 3 minutes or until cheese melts. Remove from oven and serve.

Rated  by a cook on 7/15/2009 This was a great recipe! Super quick and easy and so delicious! I altered it a little and used speg. sauce instead of fresh tomato, since it's what I had on hand. I'm sure it will be great with a number of different topping combos. The garlic flavor was subtle and paired great with the mushroom. Cooked for around four or five minutes to cook mushroom all the way through. I just loved this recipe!
