what you need
- 1 whole chicken or 2 pounds ground beef
- 1 large onion
- 1 or 2 large green peppers
- 2 pounds Taco Bell Refried Beans
- 16 ounces mild Taco Bell Salsa
- 16 ounces whole tomatoes
- 1 pkg. Taco Bell Taco Seasoning Mix
- 1 pound Kraft Shredded Cheddar Cheese

If using chicken, partially cook in microwave oven for 12 minutes. Turn half-way through the 12 minutes. Bone the chicken and discard the non-meat portions. Place in large cooking pot. If using ground meat, be sure to brown it in a large cooking pot.
In a separate frying pan, saute chopped onion and green pepper. Pour in the refried beans. Add to the cooking pot with meat. Add salsa and tomatoes, and taco seasoning mix to the meat. Simmer for 2 hours or until thick and saucy.
Add the shredded cheddar cheese and mix thoroughly. Allow to refrigerate overnight or for at least eight hours before serving. However, re-heat and serve hot.
Notes
It goes quicker if you are working with ground meat. The boning of chicken can add 1 to 1 1/2 hours to the preparation time.
