what you need
- 5 Idaho potatoes
- 1 medium onion
- 1 jalapeno
- 1 Roma tomato
- 3 Tbsp. vegetable oil
- Garlic salt (to taste)
- Pepper (to taste)
- 2-3 Tbsp. hot sauce (to taste)
- 4 eggs
- Kraft Mexican Cheese
make it
Wash and cube the potatoes. Wash and finely chop onion, jalapeno, and tomato.
Mix together in large skillet, add oil, garlic salt and pepper. Cook on medium heat for 45 minutes moving constantly with spatula. Add hot sauce, continue cooking 5 minutes.
Add eggs over potato mix. Continue moving until eggs are fully cooked and potatoes are soft. Sprinkle cheese over mixture before serving.
Notes
Constantly moving the potatoes is a must, you don't want them to burn, just get soft.
