Pumpkin Bars with Cream Cheese Frosting

what you need
  • 2 cup all purpose flour
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 4 eggs
  • 1 can (15 oz.) pumpkin
  • 1 and 2/3 cups sugar
  • 1 cup cooking oil
  • Frosting
  • 3 oz pkg. cream cheese, softened
  • 1/4 cup butter or margarine
  • 1 tsp. vanilla
  • 2 cups sifted powdered sugar
make it
In medium bowl stir together flour, baking powder, cinnamon, baking soda, and salt: set aside. In a large mixing bowl beat together eggs, pumpkin, sugar and oil. Add the mixtures: beat until well combined.

Spread batter in an ungreased 15x10x1-inch baking pan. Bake at 350 degrees F for 25-30 minutes or until toothpick inserted in center comes out clean. Cool. Frost after pumpkin has cooled.

Frosting
In a medium bowl beat together cream cheese, butter, and vanilla until fluffy. Gradually add powdered sugar. Beat until smooth. Frost when pumpkin is cool.
Notes
Let pumpkin cake cool completely before frosting.

Rated  by behnsabula on 3/7/2011 I am very picky about recipes and needed a bar recipe quickly, found this one and the ingredients looked good so went for it. It was totally a good pick. They will be loved tonight at the school function! Very moist!
