Pumpkin Bread

what you need
  • 3 1/2 cups flour
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. ground cloves
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 2 cups solid pack pumpkin
  • 1 cup oil
  • 3 cups sugar
  • 3 eggs
  • 1 cup chopped walnuts
  • 1 cup raisins (optional)
  • GLAZE:
  • 1 1/2 cups powdered sugar
  • 1 tsp. graded orange peel
  • 6 tsp. orange juice
  • Additional chopped walnuts for top

Preheat oven to 350°F. Grease two loaf pans. In a medium bowl combine: flour, baking powder, baking soda, cloves, cinnamon, nutmeg and salt. Set aside.

Use electric mixer and combine: pumpkin, oil, sugar, eggs. Mix well. Add dry ingredients by hand. Add nuts and raisins.

Bake for 50-55 minutes, or until a toothpick comes out clean. Cool on wire rack for 15 minutes. Remove from pans and cool completely.

Combine ingredients and spoon over top of loafs and sprinkle with nuts.

Rated  by GahJess on 9/23/2006 Absolutely great. I'll be making this again. I'm planning to take it to Thanksgiving with the family. I didn't use the glaze, but I'm sure it would be great with it as well.
