Pumpkin Cookies with Cinnamon Buttercream Icing

what you need
  • 1 cup sugar
  • 1 cup canned pumpkin
  • 1/2 cup shortening
  • 1 Tbsp. grated orange peel
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
make it
Preheat oven to 375 degrees F. Mix sugar, pumpkin, shortening and orange peel. Stir in flour, baking powder, baking soda, cinnamon and salt.

Drop dough by teaspoonfuls onto ungreased cookie sheets.

Bake until light brown, 8-10 minutes. Immediately remove from cookie sheet.
Ice with buttercream/cinnamon icing.

Rated  by a cook on 10/18/2009 Very good, the cookies were moist and tasty. I added some pumpkin spice just to make it more pumpkin-y!
