Pumpkin Mousse for Weight Watchers

what you need
  • 2 boxes Jell-O Sugar Free Instant Vanilla Pudding
  • 1/4 tsp. pumpkin pie spice
  • 2 cups skim milk
  • 1 cup pumpkin (canned)
  • 1 cup Fat Free Cool Whip
make it
Whip the first four ingredients together. Fold in the Cool Whip. Put into a pie pan.

Refrigerate at least one hour for flavors to marry.

Dab Cool Whip over the top to decorate or serve it in a bowl nearby for topping.
This recipe was given to me at a Weight Watchers meeting. They say that a fourth of this is worth 2 WW points.

Rated  by a cook on 11/26/2009 Very easy to make! Tastes just like pumpkin pie, but the texture of pudding. I added some crumbled graham crackers and vanilla wafers to the top to add a "crust." I also added almost a tsp of pumpkin pie spice to add some more flavor.
