Pumpkin Pancakes

what you need
  • 2 cups all-purpose flour
  • 2 Tbsp. packed brown sugar
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ginger
  • 1 3/4 cups solid pack pumpkin
  • 1 egg
  • 2 Tbsp. vegetable oil
  • 2 1/4 cups milk
make it
1) Combine first 7 ingredients in a large mixing bowl.
2) Combine remaining ingredients in a small bowl.
3) Add pumpkin mixture to flour mixture; stir just until moistened.(Batter may be lumpy)
4) Heat skillet over medium heat. Brush with oil. Pour 1/4 cup batter for each pancake; flatten slightly with back of spoon. Cook until bubbles form on surface & begin to burst. Flip. Cook for 1-2 more minutes or until golden brown.
Notes
Great for a fall morning breakfast. Serve with warm maple syrup.

Rated  by reneebear1 on 12/4/2009 My daughter has been asking for pumpkin pancakes for a year, so I made them the morning after Thanksgiving and WOW were they wonderful...We now have our new yearly tradition on "Black Friday" who needs to shop when you can stay home and be extremely satisfied:-)
