Pumpkin Pecan Pie

what you need
  • 3 slightly beaten eggs
  • 1 can (15 oz.) pumpkin
  • 3/4 cup sugar
  • 1/2 cup dark-colored corn syrup
  • 1 teaspoon vanilla
  • 3/4 teaspoon ground cinnamon
  • 1 unbaked (9 inch) pastry shell
  • 1 cup chopped pecans
  • Whipped cream (optional)
make it
In a medium bowl, combine the eggs, pumpkin, sugar, corn syrup, vanilla, and cinnamon.

Pour into the pie shell and sprinkle with pecans.

Bake in a 350°F oven for 50-55 minutes or until knife inserted near the center comes out clean. Cool on rack. Cover and refrigerate within 2 hours. Serve the pie with the whip cream, and sprinkle cinnamon on top if you please.
It really is very good.
