what you need
- 3 eggs, beaten slightly
- 1 cup granulated or brown sugar (I like brown, it gives nicer color)
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. nutmeg
- 1/4 tsp. ginger
- 1 can (15 oz. - not quite 2 cups) pumpkin
- 1 cup evaporated milk
- 1 unbaked pie shell

Combine eggs, sugar, salt and spices. Beat well. Blend in pumpkin. Add milk and beat well.
Put into unbaked pie shell.
Bake at 450 degrees F for 10 minutes and then at 350 degrees F for 40-45 minutes. Test for doneness by inserting a knife blade in center. It comes out clean when pie is done.
Notes
Make 1-2 pies depending on the size of your pie tin.
