Pumpkin Pudding Delight

what you need
  • 1 pkg. Jell-O Pumpkin Spice Instant Pudding Mix
  • 2 cups milk
  • 1 bar (8 oz.) Philadelphia Cream Cheese
  • 1 Eagle Brand Sweetened Condensed Milk
  • 1/3 cup lemon juice
  • 1 tsp. vanilla extract
  • 1 cup pumpkin puree (canned or fresh and drained, but not pie filling)
make it
Mix pudding mix with milk; set aside.

Beat cream cheese until no lumps remain; add condensed milk and mix well. Slowly pour in lemon juice and extract until thoroughly blended. Mix in pumpkin and pudding.

Can be served immediately, or better if frozen (in freezer-safe container or use ice cream freezer per manufacturer's instructions).
To serve, top with sweetened whipped cream and orange zest, or a spoonful of whole cranberry sauce with a sprinkling of confectioners' sugar. Crumbled gingersnap cookies work well, too!
