Pumpkin Ribbon Bread

what you need
  • FILLING:
  • 2 - 3 oz. cream cheese, softened
  • 1/3 cup sugar
  • 1 tablespoon flour
  • 1 egg
  • 2 teaspoons grated orange peel
  • BREAD:
  • 1 cup cooked pumpkin
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • 1 2/3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 cup chopped pecans
make it
For filling, beat cream cheese, sugar, and flour together in small bowl. Add egg; mix to blend. Stir in orange peel; set aside.

Make bread by combining pumpkin, oil and eggs in large bowl. Add sugar, salt, cloves, cinnamon, flour, baking soda and pecans; mix to blend.

Pour one-quarter of batter into two greased and floured 7 1/2 x 3 1/2 x 3" loaf pans. Carefully spread the cream cheese mixture over batter. Add remaining batter, covering filling.

Bake at 325 for 1 1/2 hours or until brad tests done with wooden pick. Cool 10 minutes before removing from pans. Store in refrigerator.
Notes
I found this recipe in an old recipe book. I was re-doing my recipe box and made sure this was in the "favorite" box! I make this a Christmas time for my friends. Several of them have told me that is all they want from me at Christmas is this homemade pumpkin bread. They look forward to the treat! I have made it it smaller bread pans and even made muffins out of it. No matter what....it is yummy!!!

Rated  by bass90 on 7/23/2009 oh my goodness we made the Zucchini Bread which was the best ever, and we made the Pumpkin Ribbon Bread which was also great everyone should try these. I have 5 boys and they all loved them.
