what you need
  • 1 pre-made pie crust -- frozen works
  • 1/2 cup of meat (ham, sausage or bacon)
  • 1/4 onion or chopped broccoli, peppers
  • 1 cup Swiss or Gruyere grated cheese
  • 1/4 cup parmesan cheese
  • 4 eggs (or 6 egg whites - I use 1 whole egg plus 4 egg whites)
  • 1 cup half-and-half (I use 1 cup of 2% works too)
  • 1/2 tsp. salt
  • Black pepper to your own taste

Preheat oven to 400 degrees F. Place ingredients heaviest to lightest in the pie crust (meat, onion or vegetables, then cheese on top).

Mix the eggs and milk well. Add the salt and pepper. Mix well. Pour the eggs over the meat, veggies and cheese in the pie crust.

Bake at 400°F for 15 minutes, reduce heat to 350°F and bake 15 minutes. Using milk and not half-and-half will increase cooking time. Stab the center with a knife -- it can jiggle like Jell-O is OK. If the knife is wet, keep cooking until the top has some golden brown to it.
Notes
Using egg whites only reduces the fat and increases protein content. One whole egg gives a bit of fat but gives the warm yellow color it needs.
