what you need
- 1 cup chopped onion
- 1/2 package cream cheese (about 4 oz)
- 1 package precooked chicken (at least 6 oz.)
- 1 cup bottled picante sauce or salsa (I like medium)
- 6 to 8 large burrito size flour tortillas
- 1 can enchilada sauce (Green, Red or Mole)
- 1 cup shredded cheese (I use Kraft Taco blend)

Preheat oven 350. In a medium size pot, saute the onion for 4 to 6 minutes, then add cream cheese, chicken and picante sauce. Cook until cream cheese melts.
Spoon mixture into the center of tortilla, roll up, and place into a 13 × 9-inch baking dish (grease the dish with cooking spray).
Pour enchilada sauce over tortillas and sprinkle with cheese. Bake until cheese melts, about 20 minutes.
Notes
Chopped onions - To save time, I buy these pre chopped with a little green pepper.
