Quick Salmon Cakes

what you need
  • 1 can pink salmon, undrained
  • 2 eggs
  • 1/2 cup of fish fry, seasoned or unseasoned
  • 1/2 cup chopped onions
  • 1/2 green, red, and/or yellow pepper
  • Fresh parsley
make it
Start with can of pink salmon. Mix all ingredients well. Use canola or EVOO (extra virgin olive oil) to coat the pan until hot.

Scoop out mixture and round it out into the pan. Let it cook 4 minutes on each side under medium heat until golden brown. Garnish with fresh parsley.
You can add your own mixtures to the mix, or substitute fish fry for flour.
