what you need
- 1/2 cup sugar
- 3/4 cup brown sugar
- 1 stick real butter
- 1 teaspoon Vanilla
- 1 egg
- 1 1/4 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup old fashioned oats
- 1 cup dry cereal/raisin bran crunch or Post Honey Bunches of Oats
- 1 1/4 cup shredded coconut
- 1/2 cup raisins
make it
Cream the first 5 ingredients in a large bowl. In a separate bowl add dry ingredients flour, baking soda, baking powder and oats. Add these dry ingredients to the creamed mixture. Now add in cereal, coconut and raisins.
Drop by teaspoons onto ungreased cookie sheets (12 per sheet) and bake at 350 degrees for 15-17 minutes until lightly browned. Let stand 3-4 minutes before removing from pan to cooling rack.
Notes
This is a "most wanted" recipe/cookie at work. Its fun and easy to make. You can be creative and add any type of chocolate chip. I've tried them with dried cranberries and white chocolate chips too. You can add any type of nuts. I've also used Honey Bunches of Oats with almonds. Be creative and have fun.
