what you need
  • 4 cups water
  • 4 cups uncooked Minute Rice (white)
  • 1/2 cup fresh cilantro (chopped)
  • 2 limes, divided
  • 2 cans black beans
  • 1/4 tsp. garlic salt
  • 1/4 tsp. cominoes (ground cumin)
  • 2 avocadoes
  • Sour cream
  • Salsa
  • 2 tomatoes, chopped
  • Monterey jack cheese or longhorn cheese (shredded)
make it
Bring water to a boil. Add uncooked rice and let stand for 5 minutes. Add chopped cilantro and squeeze juice from one lime to rice and mix.

Heat black beans over medium heat. Add garlic salt and cominoes to black beans and mix.

Mash avocadoes and add juice from one lime.

In individual bowls or plates:
Layer rice, beans, avocado, sour cream, salsa, tomatoes, and cheese. Enjoy!
Notes
Shredded beef or chicken may also be added for a tasty variation to this recipe.
