what you need
  • 3 eggs, well beaten
  • 2 packages (8 oz.) cream cheese, softened
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1/2 teaspoon almond extract
  • 3 cups sour cream
  • Graham-Nut Crust
  • 1-3/4 cups fine graham cracker crumbs
  • 1/4 cup very finely chopped walnuts
  • 1/2 teaspoon cinnamon
  • 1/2 cup melted butter
make it
Combine eggs, cheese, sugar, salt and extracts; beat until smooth. Blend in sour cream; pour into Graham-Nut Crust. Trim with reserved crumbs.

Bake in moderate oven 375 for 35 minutes or till just set. Cool. Chill well; about 4 to 5 hours. (Filling will be soft.)

Graham-Nut Crust
Combine fine graham cracker crumbs, very finely chopped walnuts, cinnamon, and melted butter. Reserve 3 tablespoons mixture; press remainder on bottom and 2-1/2-inches up on sides of 9 inch spring-form pan.
This is a very good and rich recipe. You can top it with fruit fillings before serving.
