Roast Chicken Piccata

what you need
  • 6 bone-in chicken breast halves, about 5 pounds
  • 6 lemon slices
  • 1/2 cup lemon juice
  • 5 cloves garlic, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup Worcestershire sauce for chicken
  • 1 tsp. salt
  • 3/4 tsp pepper
  • 3 Tbsp. capers, drained
  • Lemon wedges, optional

Preheat oven to 425 F. Line a roasting pan with foil; coat with cooking spray. Separate skin from breast meat leaving skin attached. Tuck one lemon slice under skin of each breast.

Place chicken in roasting pan. Combine juice, garlic, parsley, Worcestershire and salt and pepper; pour over chicken. Roast until no longer pink near bone, 35 to 40 minutes.

Transfer chicken to serving platter. Add capers to pan juices, pour over chicken. Serve with lemon wedges.
