Ron's Apple Cake

what you need
  • 1 cup oil (Crisco)
  • 3 eggs
  • 1 tsp. vanilla
  • 2 cups sugar
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3 tsp. cinnamon
  • 1 cup nuts (I prefer pecans)
  • 4 cups diced peeled apples
  • TOPPING:
  • 1 pkg. (6 oz.) Philadelphia Cream Cheese
  • 4 Tbsp. melted butter
  • 1 tsp. vanilla
  • 1 cup powdered sugar
make it
Beat oil and eggs until frothy. Add vanilla and sugar. Beat well. Add flour, baking soda, salt and cinnamon. Add nuts and fold in apples.

Bake in 9 x 13 pan at 350 for 50-60 minutes.

TOPPING:
Mix cream cheese and butter. Add vanilla and then powdered sugar; mix well. Spread on cake as soon as it comes out of the oven. ENJOY!
Notes
This is very quick and easy. Very moist ~ just great with a cup of coffee. I knew when I needed to bake this ~ when I came home from work and my late husband was peeling apples. Way too funny.
