Salmon Croquettes (Patties)

what you need
  • 6 cans (6 oz.) skinless, boneless pink salmon
  • 1 Tbsp. baking powder
  • 2 large eggs
  • 1 tsp. minced onion
  • 1 cup flour
  • Garlic powder to taste
  • Salt to taste
  • Pepper to taste
make it
Heat vegetable oil (about 1/2 inch) in a large, nonstick skillet. Drain salmon, reserving 1/2 cup of the liquid. Add baking powder to liquid from salmon.

Combine all ingredients (salmon, reserved liquid mixture, eggs, minced onion, flour, garlic powder, salt and pepper) in large bowl.

Shape into patties and fry in hot vegetable oil until golden brown.
Notes
I recommend serving this with augrautin potatoes and asparagus and/or English peas. My entire family loves this meal!
