what you need
- 1 large onion, diced small
- 1 cup finely crushed saltines (salted or unsated)
- 2 cans (16 oz. each) salmon
- 2 large eggs
- 2 or 3 pinches flour for binding
- Seasoned salt
- Black pepper to taste
make it
Dice onion in small pieces. Crush saltines with blender or put crackers in a Ziploc freezer bag and crush with heavy object.
Drain salmon put into a mixing bowl. Add onions, saltines, eggs, flour and seasoning. The mixer should be moist but not too wet. You should be able to make 8 nice size patties.
Pan fry until nicely brown on both sides.
