Salmon Patties

what you need
  • 1 large onion, diced small
  • 1 cup finely crushed saltines (salted or unsated)
  • 2 cans (16 oz. each) salmon
  • 2 large eggs
  • 2 or 3 pinches flour for binding
  • Seasoned salt
  • Black pepper to taste
make it
Dice onion in small pieces. Crush saltines with blender or put crackers in a Ziploc freezer bag and crush with heavy object.

Drain salmon put into a mixing bowl. Add onions, saltines, eggs, flour and seasoning. The mixer should be moist but not too wet. You should be able to make 8 nice size patties.

Pan fry until nicely brown on both sides.

Rated  by jboyce77 on 5/16/2005 It tastes very good but it didn't stay together very well. Most of my patties were crumbling. What i did the second time around was to do the mixture with a few of the suggested add-ins, but i added 2 eggs and a bit of flour and baked it as a casserole. I got compliments on was very good.
