Salmon with Scalloped Sweet Potatoes

what you need
  • 3 medium sweet potatoes, peeled and thinly sliced [about 4 cups]
  • 1 medium onion, roughly chopped
  • 1 tsp. grated ginger
  • 1 cup orange juice
  • 3 Tbsp. orange marmalade (1 Tbsp. reserved)
  • 2 Tbsp. melted butter
  • Salt to taste
  • 1-1/4 lb. salmon fillet, cut into 6 pieces
  • Freshly ground pepper to taste
  • 1/4 cup parsley
make it
Preheat oven to 400 degrees F. Combine sweet potatoes, onion, ginger, juice, 2 Tbsp. marmalade, butter and salt.

Place in a 9x13 casserole dish, sprayed with cooking spray. Bake covered for 40 minutes. Remove from oven.

Top with salmon. Brush fish with reserved marmalade, grind on pepper. Return to oven uncovered and bake 10 to 12 minutes until fish is done to your liking. Garnish with parsley.
Notes
I added zucchini cut into 1 inch pieces on top of the potatoes before putting into the oven.
